Ramen is a Japanese noodle bowl consisting of Chinese-style wheat noodles served in a hot meat-based broth. The broth may be flavoured with a generous amount of soy sauce or miso, and the noodles are topped with sliced pork (チャーシュー chāshū?), dried seaweed (nori, 海苔), green onions, bean sprouts, bamboo shoots and corn. In Japan, variations of ramen evolved in different regions, from the tonkatsu (pork bone broth) ramen of Kyushu to the miso ramen of Hokkaido.

Yuu Tonkotsu Ramen’s nutritional value lies in its unique and delicious cream white soup base. The soup contains a host of nutritional ingredients and is full of “natural collagen”, protein, vitamin C, B1 and B12- which helps maintain the condition and structure of skin organs and to repair damaged tissues.

Tonkotsu (豚骨, "pork bone")

Ramen of Kyushu features a milky broth infused with delicate pork flavour. The noodles are enriched by this fragrant and subtly sweet tonkotsu stock. To make this hearty and creamy broth, a chef would boil tonkotsu and collagen over high heat for many hours. This broth is similar to the Chinese baitang (白湯) and is accentuated with tinge of green onion and sesame oil.

Shōyu ("soy sauce")

Ramen has a dark brown and clear broth. This soup is crafted using a pork stock and a very generous amount of shoyu. Our chef prepares this special shoyu by aging if for 14 days before use. This simple soup is savoury, tangy, and salty, but it leaves a delightful and memorable experience to your taste-buds.

Miso Ramen

Miso ramen originated from Hokkaido, Japan’s northernmost island. This nutty and tangy soup consists of a tonkotsu stock and plentiful of miso (a fermented paste made of soybean and/or rice & other grains). Our chef combines yellow and red miso together, and age it for 14 days before adding to the broth. With this strong-flavoured soup base, the noodle bowl can match up with various kinds of toppings. It is also a warm comfort on an icy winter day.

Tomato Ramen

Tomato Ramen is a contemporary variation of ramen. The hearty broth is made of Tonkotsu (pork bone broth), fresh tomatoes, and onions. This bright-coloured ramen gives a new twist to the ramen, and uplift your appetite to a new level! This broth is often paired with chicken instead of the traditional chashu, which is a refreshing alternative to other bold-flavoured ramen.
